This is a simple, yet incredibly flavorful soup that I made for my mother’s birthday. It is not the easiest soup to make. It is also not the healthiest soup for those with diabetes. I am not sure what is causing these issues, but so far I have not been able to figure this one out. My mother is an 80-year-old woman. She is an avid gardener and loves to eat her vegetables.
I don’t know what the issue is, but this soup is so good and so easy and so delicious that I’ve been making this soup for myself since I was a teenager. So I think I will be making this soup for myself for years to come.
